~~~ Part One, Our OBX Vacation!!!~~~

Hi everyone! We are BACK! We just spent a week at OBX, (the Outer Banks of N.C.). We had a wonderful vacation! We go with our best friends and their entire family, there were 23 of us!!!! It is a GREAT time and I will share pictures probably all this week! So please come back!!!! We organize this trip this way: each day one family is "Captain of the day" and you are responsible for breakfast, lunch, snacks and dinner for the ONE day!!!! It is fabulous! For our day we decided to do a tribute to Joe's Dad who passed away this past March. So, here is a little sampling of our day. Unfortunately, I never got pictures of our FOOD, since we were so busy cooking and serving BUT, it was VERY well received by all!!!! You will see on the board what all we did.  Here is the menu board and I got shots of each section for you.
 Making crepes for 24 people is no easy task, let me tell you. My wonderful hubby was the chef for these and I kept them going into the oven to keep warm. We served them with 4-5 different jellies and powdered sugar, then you roll them up and cut in half. The kids loved that!
 Lunch was yummy too. This year was a pretty easy year, cooking!
 "Slimey" is a nickname of one of the Mom's from when she was a child. Fortunately, it didn't stick:):):) She is a gorgeous, wonderful Mom now!!!!
 This is Joe's Dad and my WONDERFUL Father-in-law. We miss him alot. He was a pilot first in the Army Air Corp, played semi pro baseball and football, then joined an airline to pilot for many years. He retired a Captain and flew 747's.

 The plane in this picture is the P38 Lightening that he flew in the war.

 This is how I will always remember him. What a GREAT Father!!!!!!!!!!!!!!!!!!!!!!!!!
 Always FUN!

 This was the day of his last flight. We all went to NYC to meet his plane. It was a FREEZING cold day (40 below with the wind chill). But we got him to pose IN the engine!!!!!!!!!! How cool is that!!!????
He was a great artist too! He made the Hi sign and the bells from styrofoam!

    You are such a creative lady! I adore the photos of Joe! He certainly looked as if he knew how to live life to its fullest! This is going to be the BEST entry in On The Menu Monday...you get my vote...hands down!Family, food, friends...life doesn't get any better than this!

  6. What a wonderful collection of photos! I love the one of him in his flight gear~ what a handsome fella he was!

    I haven't been to the Outer Banks in years. My hubby goes in the fall & spring on a fishing trip. Love the menu board idea so everyone knows what to expect for lunch & dinner :-)

  7. HI Pinky, your menu sounds delicious! I love gwumpkis! My mom makes the best ones--I think I need to learn too. We used to go to the Outer Banks every summer when the kids were little. We always rented a house on the beach with our excellent friends. Sometimes the hurricanes would come and we would leave, but usually the weather was perfect. The horses used to stand in the garage under the house! Oh, I loved going there, but when the kids got bigger we were afraid to let them swim alone with the undertow, so we started going to Cape Cod more often. I would love to go back to the Outer Banks!!   11. Oh Pinky what a wonderful tribute to your beloved father-in-law! And what a great idea to plan a menu around!The pictures are wonderful treasures, I'm sure! I love your choice of food. Golabki (I say Halupki) is a winner of a meal! When I see you next time we will have to compare recipes!

  12. Oh I simply had to comment on this post. Your photos and words about your father-in-law brought a tear to my eye. What a lovely tribute and what a meaningful life he led!
    Your post reminded me of all the summer weeks we spent at Nags Head when our children were little. I admire your organization with that blackboard menu and every day's meals planned so thoroughly. I hope you all share the cooking duties! :)

    About the tree, a few years ago a branch came down at a day camp and killed a child. Freak accident but it makes you worry!
