A Favorite Appetizer for a Crowd

I have been absent from my blog for several reasons. One of them is that we had to take an emergency trip to Fl. when one of our loved ones cancer returned and they needed surgery. I am republishing this recipe for those of you who haven't seen it. It is definitely a crowd favorite! I hope you enjoy it!!! Most people call this "Cowboy Caviar". I don't know why but I do know it is delicious and everyone I have served it to, loves it. I hope you will try it soon! here is the recipe and some pics I took making it. I copied the recipe from "Spend With Pennies".

COWBOY CAVIAR

A fresh, simple dip that can be thrown together in under 15 minutes!  This Cowboy Caviar makes a great side dish for any picnic, potluck, or party, and is a great way to use up your summer produce!

INGREDIENTS:

  • 3 Roma tomatoes , seeds removed, diced
  • 2 ripe avocados diced
  • 1 15 oz can black beans , rinsed and drained
  • 1 15 oz can black eyed peas , rinsed and drained
  • 1 ½ cups frozen sweet corn , thawed (I just usually toss it in the salad frozen unless I plan on eating it immediately, it thaws quite quickly).
  • 1 bell pepper , diced (I used half a green and half a red, but color doesn’t matter)
  • ⅓ cup red onion , diced
  • 1 jalapeno pepper , seeds removed, diced into very small pieces
  • ⅓ cup Cilantro , finely chopped

DRESSING

  • ⅓ cup olive oil
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons lime juice (fresh preferred)
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1/4 tsp garlic powder
  • Tortilla chips , for serving

  1. Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
  2. In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
  3. Pour dressing over other ingredients and stir/toss very well.
  4. Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.
As you can see I did a mix of green red and yellow sweet peppers.

Thanks for your visit. Not much is happening around here as Summer is winding down. Are you thinking of or planning for Fall? I am, planning and making lists:) I LOVE Fall and Fall decorating. But, I do NOT want to rush the seasons and I especially don't want to rush into Winter:(

Palm Trees at the Table!

We just spent 11 days away. It was not a vacation. We had to go to Florida when we learned that a loved one's cancer returned and they needed surgery. So, it was not a fun trip but it facilitated a mini family reunion; as my daughter flew down and my son lives there so the 4 of us got to spend a day and evening together and THAT was wonderful. I just LOVE palm trees and anything tropical so when I got home I needed to set a pretty tropical table with palm trees.
It is just a simple setting but reminds me of the palm trees swaying in the breezes in Florida.
A water hyacinth place mat, the palm dinner plate, solid green salad plate and palm tree plate make up the stack.

Palm leaf napkins, simply folded. No napkin ring for this table.
And of course, my palm tree flatware. I actually found this at CTS( Christmas Tree Shops), several years ago and couldn't grab it fast enough!
For my centerpiece I borrowed this monkey candle holder from the bedroom and used a rope ball on a candle ring.

I had found this runner at Ross last week for $6.00!

These S and P were my in laws. I have always loved them. They are probably over 50 years old now!

I placed a wicker votive holder at each of our places.
2 palm tree taper holders flank the centerpiece.

At night I lit the candles, just for you! It isn't dark when we eat dinner (thank God) so I waited til it got dark:)

Thanks so much for stopping by. I haven't had much to post about but Fall is creeping up on us and then there will be TONS to share. I want to enjoy summer til the bitter end though. We are having another heat wave and it has been SO humid. I wish it was just a little cooler, today it was 95 IN the garage!!! Crazy!

Where have I Been??? And Some Vignettes!

Good morning. I have not posted in awhile because of life's ups and downs. We had to make an emergency trip to Fl. because a loved one's cancer came back and they needed surgery to save their life. I can not be more specific, at their request but we packed and left and drove for 3 days to get to Ft. Lauderdale, Fl. It was a very emotional 11 days til we got home again. I am happy to say that it was an intense surgery but things are looking up.
So, I have not done much around here so I thought I would just share some vignettes around the house. Since I got my shells out not much has changed so here are a few pics for you. We'll start by the front door.
This is my tiny server in the dining room.
This is the space between our 2 offices.
 You've seen this many times.
The credenza as it is decorated right now.

 Next to the credenza.

My shells on the coffee table.
Some shells on the corner table.

 My nightstand.

 Master bath.
 Master sitting area,
 In my office.
On top of my desk hutch.

Thanks for stopping by. The summer is flying by!!! We are in another heat wave. I walk every night after dinner and tonight it was still 87 degrees at 7:30 but felt like 95!!!!!!!!! UGH. I hope to spend most of tomorrow at the pool, actually IN the pool:):)
